The Best Gluten and Dairy free Snacks!

Hello all! Wow, it's been a while since I last posted on here. If you haven't been following me on Instagram (or in real life) lately, we are now a family of four! It's been a busy few weeks with two little ones, but I wouldn't change it for anything. I mean, just look at this little peanut.




Anyways! I've been meaning to make this post for a while now. For those who don't know, my daughter, Addison has had some gut issues her whole life (Good news though-I'm pretty sure she's almost finally on the mend! That'll be another post.) So finding snacks that are free of all the allergens/inflammatory foods and that still taste good is hard to do. If you're living a gluten free, dairy free or  vegan lifestyle I hope this post helps!

Here's some of our favourite snacks ( they all have minimal ingredients):

If you can't have corn, these are great tortilla chips! They're made with cassava flour and are nice and light.

These almond crackers are a good alternative to your typical rice or corn crackers. They taste yummy and have a lot of different flavours to choose from.

These cookies are great if you have a sweet tooth! Addison loves them.

This is our favourite "ice cream". Again, minimal ingredients and it's sweetened with honey so I don't feel guilty giving it to my daughter. 

If you like cheesies, then you will love these cauliflower puffs - We do! And a bonus, they have probiotics in them!


I order most of these foods from Natura Market . They have so many healthy goodies to choose from, from paleo to vegan.

Raw Wild Blueberry Pie


I recently purchased the book "Life-Changing Foods" by Anthony Williams and it really is life changing. If you haven't heard of him but believe food really is thy medicine, then you should check him out here .  All the information in the post is taken from his book.

So anyways, back to this book! Besides having really interesting information (you probably won't find anywhere else) on all the healing foods, it has a bunch of really easy, healthy recipes. The first one I tried was this raw wild blueberry pie, which was delicious. I loved it, Addison loved it and so did my mom. And it's RAW so there's no baking involved.

Before getting into the recipe, I'll share a bit of info about wild blueberries.

  • First, wild blueberries and the regular blueberries you find in the produce area are NOT the same. Its like comparing farmed salmon and wild salmon. (You can find wild blueberries in the frozen aisle)
  • Wild blueberries remove heavy metals and radiation from the body
  • When you eat berries their innate intelligence reads your body, searches out potential disease and figures out the best way to heal you (how amazing is that?)
  • Besides being full of antioxidants, blueberries are a potent prebiotic and also restore the liver
That's just a bit of information on how wild blueberries are one of the most important healing foods. What I found really interesting is these wild blueberries can survive anything. These plants can be burned to the ground and they will come back stronger than ever. They really are a super food.

Ok, so onto the recipe!




Ingredients:

1/3 cup cashews
1/3 cup unsweetened shredded coconut
4 cups pitted dates
20 ounces frozen wild blueberries, thawed
1 mango, diced ( i used frozen)



For the crust; process cashews, coconut and 3 cups of dates in a food processor until thoroughly combined and smooth. Press the crust into a 9 inch pie dish. Cover and refrigerate.

For the filling; process half of the wild blueberries, the remaining dates and the mango in a food processor until smooth. Stir in the other half of the blueberries (I just put them on top)
Pour the filling into the pie crust and set in the fridge for at least 40 minutes.

That's it!

So easy! And so yummy!

The best grain free, gluten free, dairy free muffins!

We recently found out Addison can't have gluten so I've been trying out a bunch of new recipes lately. These banana muffins are the best grain free muffins I've made so far, so I thought I'd share!
Like the title says, there's no grain, no gluten, no dairy and no refined sugar!
Let me know what you think if you end up trying these out!


What you'll need:
  • 1 TSP of cinnamon
  • 1/2 TSP salt
  • 1/2 TSP baking soda
  • 3/4 cup of coconut flour
  • Ground flax seed mix (egg replacer) *See note below
  • 1/2 cup of melted coconut oil
  • 1/2 honey ( sometimes I do just a bit less)
  • 1 TBS vanilla
  • 3 ripe bananas
* 1 TBSP of ground flax + 3 TBSP of water = 1 egg



Instructions:

1. Preheat oven to 350 degrees.

2. In a large bowl mix together all wet ingredients.

3. In another bowl mix together dry ingredients.

4. Combine the wet and dry ingredients together.

5. Spoon the batter into lined muffin tins.

6. Bake for 30 minutes.


*It will be tempting but make sure to let them cool completely. Coconut flour tends to crumble when still warm.
